When the weather gets cold and the days get shorter, I always crave chili’s, soups, and stews. I have a ton of recipes that I love to make on a regular basis and this White Chicken Chili is one of them, and it’s really easy because I make it in the crockpot. You can make it on the stove-top, but crock pot is my go-to method during those busy fall days with 5 kids.

White Chicken Chili Crock Pot Easy Recipe
- 3 pounds chicken breast
- 4 cups chicken broth
- 2 cans white navy beans
- 4 cans green chilis
- 2 cans cream of chicken soup or make my homemade version
- 1 yellow onion diced
- 3 teaspoons diced garlic
- 1 Tablespoon cumin
- 2 teaspoons chili powder
- 2 teaspoons garlic salt
- 2 teaspoons onion powder
- 1 teaspoon oregano
- 3 cups sweet frozen corn
Directions: to the crockpot, add the chicken, chicken broth, beans, chilis, cream of chicken soup, onion, garlic, cumin, chili powder, garlic salt, onion powder, and oregano. Cook on high for 3 hours or on low for 6 hours. Remove chicken from pot and shred with two forks. Use a potato masher to mash the beans just a bit in the crockpot. Place the chicken and corn in the crock pot and stir. Keep on the warm setting for at least 10 minutes to help the corn thaw and get warm.
Serve with sour cream, shredded Mexican blend cheese, avocado, cilantro, tortilla chips, etc. Enjoy!
