Low Carb Italian Zucchini Boats

Baked Italian Zucchini Boats

Do you have a garden that is overflowing with zucchini?

Are you giving out to everyone who comes to your house? Do you need a delicious recipe to use it all up? Well, I”m here for you today with a recipe for Italian Zucchini Boats. I love them because they are Low Carb and they are full of protein and a sneaky way to get the kids to eat their veggies. Even ALL of my kids loved them, so you know they are good. The kids loved the fact that we called them boats. It made them fun to eat.

These are one if the easiest recipes I’ve made for dinner and they were surprisingly filling.

We made pasta to do along with them just in case the kids were still hungry and now we have a whole container full of leftover pasta.

Italian Zucchini Boats

Makes 8. Total time from start to finish is about an hour.

  • 1 lb. Ground Hamburger or other ground meat of your choice (Italian Sausage would be good too)
  • 1/2 yellow onion, diced
  • 2 garlic cloves, diced
  • 1- 14.5 oz. can Petite Diced Tomatoes
  • 1 cups Spaghetti Sauce (our favorite is Prego Traditional)
  • 4 medium sized zucchini
  • 3-4 cups shredded mozzarella cheese
  • Salt and Pepper to taste
  1. Add the ground hamburger, diced onion, garlic cloves and salt and pepper to a medium saucepan. Cook on medium high heat crumbling the meat as it cooks.
  2. Once the meat is cooked all the way through stir in the can of diced tomatoes and tomato sauce.
  3. Bring the mixture to a boil and let simmer for about 10 minutes to thicken up. If the sauce is too thick you can add more spaghetti sauce. You want it to be pretty thick so it stays put in the zucchini.Low Carb Italian Zucchini Boats
  4. While the sauce is simmering, cut both ends off the zucchini. Scrape out the seeds to make canoe shaped zucchini.Low Carb Italian Zucchini Boats
  5.  Spoon the meat sauce into the zucchini boats.Low Carb Italian Zucchini Boats
  6. Bake at 375° Fahrenheit for 20 minutes.
  7. After 20 minutes take them out and sprinkle the cheese over the top of the boats. Bake for an additional 10 minutes.  Low Carb Italian Zucchini Boats
  8. Remove from oven and let cool for about 10 minutes before eating. Low Carb Italian Zucchini Boats
