Chicken is something that I use several times per week in recipes for dinner. And because I know a lot of you found an Instant Pot under your tree. Now tell me, did you buy it for yourself on Cyber Monday, or did someone else buy it for you? Ha Ha!
I bought mine for myself on Cyber Monday and told my husband that he could put a bow on it and stick it under the tree if he wanted. But, he said, NO WAY. I’m not getting you an appliance for Christmas, I’d never hear the end of it.
One of these days he’ll learn that what I’m asking for is actually what I want, even if it is a vacuum. But until then I’ll have to buy these things for myself.
So I have a lot of fun new recipes to share with you since I’ve been playing with my Instant Pot. And shredded chicken was one of the first things I’ve made. It’s so easy and quick, you’ll never make it any other way.
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup water
- 4 pounds chicken
- Add all of the ingredients to the Instant Pot.
- Press the poultry button then add 5 minutes by pressing the + button 5 times. This should bring the total cooking time to 20 min.
- When the time is done, carefully release the pressure by turning the valve on top of the pot from sealing to venting. Once it stops steaming, you can open the lid.
- Place the chicken on a cutting board and shred with 2 forks.
- If you are not using all this chicken right now, you can store the shredded chicken in an air tight container with a little of the cooking liquid in the fridge. I use gallon size zip lock bags for this.
- Enjoy using in a variety of dishes.

I recently learned to shred my chicken with an electric hand mixer. It’s great and very fast. Way easier than using forks. If you’re using the instant pot you can do it right inside the pot.
