Brookies are one of my favorite desserts to make because you get two delicious treats in one. Brownies and Chocolate Chip Cookies. These are even better than Brookies because they have a ribbon of Cream Cheese in the middle. You guys. These are to die for!
I’ve made a video tutorial so you can see just how easy these are to make. You can make the brownies and chocolate chip cookies from scratch if you want, but why would you do that when you have screaming kids running all over the place demolishing your house as you bake? I prefer the easy way out. But trust me, these do not look like or taste like the easy way out. They are gourmet. Mmmmm!
- 1 package brownie mix plus ingredients to complete the mix (usually 2 eggs, 1/2 cup oil, 1/4 cup water)
- 1- 1 lb. package chocolate chip cookie dough
- 2- 8 oz. packages cream cheese
- 1/2 cup sugar
- Prepare cake pan by lining it with tin foil and spray with cooking spray.
- Pre-heat oven to 350 degrees.
- Make the brownie mix according to the package directions and pour the batter into the pan.
- In a medium bowl, mix the cream cheese and sugar with a hand mixer until smooth.
- Drop by the spoonful over the brownie mix and spread with a rubber spatula.
- Using the palm of your hand smash the cookie dough into a rectangle to fit over the top of the brownie mix and place it on top of the cream cheese mixture.
- Bake at 350 degrees for about 25-30 minutes or until the cookies are a golden brown and the middle does not jiggle when pan is bumped.
- Let sit for at least 20-30 minutes to cool before cutting. Refrigerate leftovers for up to 2 weeks.

I made these as directed, but instead of the chocolate chip cookie dough, I used the package of pillsbury oatmeal cookie mix and dropped by spoonfuls on top. Baked all in a 9×13 pan for around 45 minutes. This recipe is really good and so easy. Thanks for sharing.
