I have decided that I am going to start living a healthier lifestyle. I am trying to eat more veggies and I am starting a Low-Carb Diet. I’ve also stopped drinking Diet Soda (all soda actually). These Taco Stuffed Bell Peppers are so perfect for this new diet of mine. I thought I’d share the recipe with you because it’s so easy and the kids will love them.
I ate these in the peppers and the kids made nachos with them. The whole family loved this recipe.

Taco Stuffed Bell Peppers
- 2 lbs ground hamburger
- 1 teaspoon salt
- 4 tablespoons taco seasoning
- 1/2 yellow or white onion diced
- 1 can black beans drained and rinsed
- 1 cup frozen corn
- 4-6 bell peppers
- shredded cheese
- sour cream
- salsa
- avocado or guacamole
Preheat oven to 375 degrees Fahrenheit. Begin by adding the ground beef to a large HOT frying pan turned to med-high. Break it up using a spatula. Add the salt and onions and cook until beef is no longer pink and the onions are translucent. Add the taco seasoning, black beans and corn and stir until mixed well. Cut the tops off the bell peppers and scoop out the insides. Fill the peppers with the meat mixture and sprinkle with desired amount of cheese. Add to a baking pan and cook in the oven for about 10-15 minutes or until cheese is melted and peppers are desired softness. Top with salsa, sour cream and sliced avocado. Serve immediately.
