I know, I know, you think casseroles are your mothers idea of dinner and you can’t stand them. But I’m here to tell you, you’ve been eating the wrong kind of casseroles. This Mexican Pasta Bake Casserole is so delicious and it’s a crowd pleaser for sure!
This recipe is so simple to make and only includes a few flavorful ingredients.
Mexican Pasta Bake Casserole
- 16 oz. Ziti Pasta
- 2 large chicken breasts or 1 lb. ground beef
- 1 small can Cream of Chicken Soup
- 1 can Rotel Diced Tomatoes with Chilies
- 1 can black beans
- 1 can black olives
- 3 tablespoons taco seasoning
- 2 cups shredded Mexican blend cheese or cheddar cheese
- sour cream and cilantro for garnish (optional)
Cook and shred the chicken or cook and crumble the ground beef. Cook the pasta according to package directions and drain well. Drain and rinse the black beans and slice the black olives. Put the pasta back in the pot and stir in the meat, can of tomatoes and chilies, cream of chicken soup, black beans, olives, and taco seasoning. Pour the pasta mixture into a 9×13 baking pan and sprinkle with cheese.
Bake at 375 degrees for 20-30 minutes or until bubbly in the middle and all cheese is melted.
Remove from oven and let sit for about 10 minutes to set up a little. Serve with sour cream and cilantro if desired. Enjoy!
