I love to make cookies during the holidays. They make my house smell so yummy and the kids really like to help. I decided I wanted to make cookies to go with our hot chocolate after sledding, and I thought, why not make Hot Chocolate Cookies? So we tweaked our usual chocolate chip cookie recipe and came up with these delicious Hot Chocolate Cookies.
These are crispy on the outside and they stay really soft on the inside. Top them with mini marshmallows when they are hot, and you have the perfect Hot Chocolate Cookie.
Hot Chocolate Cookies
- 1 cup softened butter
- 3/4 cup sugar
- 1 cup packed brown sugar
- 2 packets hot chocolate mix
- 2 eggs
- 1 teaspoon vanilla
- 1/4 cup dutch processed cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups flour
- 2 cups mini marshmallows
Preheat oven to 350 degrees. Using a stand mixer or a hand mixer, cream together the butter, sugars and hot chocolate mix until light and fluffy. Add the eggs one at a time until well blended. Mix in the vanilla. In a separate bowl mix together the flour with the salt, baking soda, and cocoa powder. Slowly stir add the flour mixture to the butter/sugar mixture blending well between each addition. Using a 2 tablespoon cookie scoop, drop the cookie dough onto a baking stone (or baking sheet) about 12 inches apart from each other. Slightly flatten with the palm of your hand. Bake at 350 degrees for 12-14 minutes or until center is set. DO NOT OVER BAKE. As soon as you take the cookies out of the oven lightly press the mini marshmallows onto the top of the cookies. The heat of the cookies will make the marshmallows melt and stick to the cookies. Store in an airtight container for up to two weeks.
Enjoy making these with your family. These cookies are especially yummy dipped in milk.
