College football season is upon us and the Game Day Parties have begun! It’s always a good idea to have a lot of food around to keep everyone happy. These BBQ Shredded Beef Bundles are the perfect finger food appetizer. Everyone will love them, including the kids.
Shredded BBQ Beef Bundles
1 pound or 4 cups cooked shredded beef (I use leftover Crock Pot Roast for this recipe)
1 cup of your favorite BBQ sauce
1 cup green onions with tops, thinly sliced
1 cup red bell pepper, chopped
2 garlic cloves, diced
2 pounds pre-made pizza dough from the bakery department at your favorite grocery store
Shred the beef and add to a medium mixing bowl. Add the BBQ sauce, green onions, red bell pepper and garlic cloves. Mix everything together.
Preheat oven to 350° F.
Shape the dough into a long loaf, like a french bread loaf. Cut the dough into 12 pieces.
Take one piece of dough and roll it out into a flat circle.
Scoop about 2 tablespoons of the beef mixture into the center of the dough.
Gather up edges of dough over filling, pinching lightly to seal.
This is the part that the kids really like to help with.
Place biscuits, seam side down, into muffin pan. Do not press down into cup.
Bake 25-30 minutes or until golden brown. I use a stick of butter to rub over the top of the hot rolls when they come out of the oven.
Serve with more BBQ sauce if desired.

Beef brisket is cooked super-slow in a slow cooker until it s falling-apart tender. The shredded beef is served on soft potato buns. This is a great dish for parties as it doesn t require very much last-minute work.
