Christmas is my favorite holiday. I’m pretty sure it’s my favorite holiday because of all the yummy food we make together in the kitchen as a family. We have a fun tradition of making a special Christmas morning breakfast. These Chocolate Covered Cherry Pancakes made with Aunt Jemima Pancake Mix are going to be our tradition this Christmas morning.
On Christmas morning, our kids know they aren’t allowed to come out of their rooms until 6 at the earliest. I know, we sound like mean Grinch parents, but if everyone doesn’t get enough sleep (especially the baby) then the day is just miserable.
So they wait at the top of the stairs until we come and take our traditional picture of them sitting on the stairs. We like to torture them by drawing out every little second. See? Don’t they look like they are so happy to sit and wait? He he!
Then we let them at it! After all the tearing, screaming, laughter and jumping for joy (opening presents) we make a delicious breakfast.
This Chocolate Covered Cherry Pancake recipe is going to be a great one to draw the kids into the kitchen to help. It’s made so simple by using Aunt Jemima Pancake Mix. A few other simple ingredients are used to make this a recipe reminiscent of a very popular and traditional Christmas candy, Chocolate Covered Cherries. So I headed to Walmart to grab the ingredients.
The Aunt Jemima Pancake Mix is easy to find right there in the breakfast isle.
These pancakes are flavored with maraschino cherry juice and packed with cherries then drizzled with an easy to make chocolate ganache. Don’t let the word ganache scare you away, you’ll never believe how easy it is to make.
My kids loved testing this recipe for me and I know your family will love it too. So let’s get cooking!
Chocolate Covered Cherry Pancakes- Makes about 40 small or 20 large pancakes
- 2 cups Aunt Jemima Pancake Mix
- 2 Eggs
- 2 Tablespoons Vegetable Oil
- ¾ cup Milk
- ¾ cup Maraschino Cherry Juice (from the Maraschino Cherry Jar)
- 1 cup Maraschino Cherries chopped, divided
- 8 oz. Milk Chocolate Chips
- 1 cup Heavy Whipping Cream
Add the Aunt Jemima Pancake Mix to a medium mixing bowl.
Add the milk, eggs, cherry juice, oil, and ½ cup chopped maraschino cherries. Mix until well combined using a whisk. Batter will be a little lumpy.
I use a 2 tablespoon cookie scoop to scoop my pancakes onto the griddle. This makes a little larger than silver dollar size pancakes.
Cook your pancakes on a griddle at about 350 degrees fahrenheit or in a pan heated on medium-high heat for a few minutes each side. Keep pancakes warm by adding them to an oven safe plate or cookie sheet in a warm oven turned to about 200 degrees.
When pancakes are done make the ganache. Warm the cup of cream in a saucepan over medium heat until it starts to simmer.
Add the chocolate chips to a heat proof bowl then pour the hot cream over the top of the chocolate.
Let sit for a few minutes then whisk until melted all the way through at smooth.
Serve the pancakes in a stack on the plate and drizzle the chocolate ganache over the top. Serve with more cherries on top. Enjoy!
