We have been making this dinner since my kids were really little. It makes my house smell amazing and it’s so quick and easy. My daughter asks for it whenever it’s her turn to choose dinner. Make it for dinner this week, and you’ll see why we make it often. It’s so yummy and everyone in the family loves it.
The first time I made this, I had three very young children. I newborn baby, a 2 year old daughter and a 3 year old son. I threw the chicken in the crock pot in the morning and headed out to the park to have a picnic for lunch. We pulled in to the park the the older kids ran to play. I unpacked the car and carried everything over to the park. After a few trips back and forth, I finally got everything settled and started to nurse the starving baby. Right then my 2 year old daughter started crying pretty hard and walking towards me.
Now, she was a very dramatic little girl, so I thought she was over exaggerating a bit. But then I noticed that her arm was hanging really wrong. I realized she broke her arm! I had to stop feeding the baby (which made her start to scream), and run and grab my daughter and take her to the car. I had so much stuff with me, I had to run over to the other mom’s at the park and ask them to help me pack it all back to the car. We headed to the Hospital with two screaming girls. We got into the hospital and got my daughter comfortable enough to get her to stop crying when they told me that they didn’t accept my insurance. Ugh! So we headed back to the car with two screaming girls again! We finally made it to the right hospital and she had to be put to sleep to get her bone back into place.
Poor little girl. After all the drama, we made it back to a delicious smelling home because of the chicken in the crock pot. All that was left to do was make the cream sauce and we were eating dinner in no time. My little girl got to eat her dinner on the couch that night so her arm could be elevated and she thought it was so cool. Now that I think of it, that might be why this is her very favorite dinner. What an adventure that day was.
So now that you know the story behind the recipe let’s get on with the recipe.
Creamy Chicken & Rice from Scratch
- 4 chicken breasts (frozen is OK)
- 2 tablespoons Italian Seasoning Mix
- 1 teaspoon salt
- 1 cup water
- 1Â cup chicken broth (or use the broth from the crock pot after the chicken is done cooking)
- 1/2Â teaspoon onion powder
- 1/4Â teaspoon garlic powder
- Pinch of black pepper
- 1/2Â teaspoon salt
- 1 teaspoon dried parsley
- 1/4 teaspoon paprika
- 3/4Â cup milk
- 1/2Â cup all-purpose flour
- 3-4 cups cooked rice
Add the chicken to your crock pot along with one cup water, Italian seasoning and one teaspoon salt.
Cook on low for 5-6 hours. Shred the chicken when it’s done and turn crock pot to warm.
Start the rice in your rice cooker or in a sauce pan. However you choose to cook your rice.
While your rice cooks, make the chicken cream sauce. In a medium saucepan, bring the broth and all the seasonings to a simmer.
In a liquid measuring cup or small bowl, vigorously whisk the milk and flour together until smooth.
While whisking the broth, slowly pour in the flour/milk mixture, whisking constantly. Continue to stir and cook until the mixture bubbles and thickens, 3-4 minutes.
Remove from the heat and add additional salt and pepper to taste as needed. Use immediately in a recipe or cool and refrigerate for up to a week. This will thicken much more as it cools.
Stir the cream sauce into the shredded chicken in the crock pot. Serve over rice. Add more salt and pepper if desired. Enjoy!
