Every Fall, my nephew sells us a 20 pound bag of potatoes which makes me get a little creative on how to use them up. This Beef and Potato Casserole is the perfect comfort food recipe to help use up all those potatoes.
This is one of those recipes that get’s made a lot because it’s so easy and really fills up the kids. It’s not a pretty recipe to take pictures of, but it really is delicious so I’m still sharing the recipe here so my kids can have it for future reference.
Creamy Beef and Potato Casserole
- 1 pound ground beef
- 4 cups potatoes
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1/2 cup chopped onion
- 3/4 cup milk
- 1 teaspoon salt
- 2 cups shredded cheese
- Preheat oven to 350 degrees F.
- In a medium skillet over medium heat, brown the ground beef then drain the fat.
- Peel the potatoes and slice about 1/2 inch to 1/4 inch thick.
- In a medium mixing bowl, combine cooked ground beef, cream of mushroom soup, cream of chicken soup, onion, milk, salt and pepper to taste.
- Alternately layer the potatoes, soup mixture and meat in a 11×7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.
