We have made a version of these meat pies since I was a little girl. The traditional Swedish Meat Hand Pies have potatoes, onions, dill, cheese and a very flaky, perfect, crust.
My grandparents migrated to America from Sweden and I love to hear stories about them from my mother. The all lived in a tiny ranch house in Montana. I wish I could have met them, but making these traditional Swedish Meat Pies makes me feel closer to them.
The seasoning in these Swedish Meat Pies is what makes them so special. Make sure you don’t miss a step!
Swedish Meat Pies from Scratch servings 8-10
For the dough:
- 4 cups all purpose flour
- 2 teaspoon salt
- 1 1/2 cup shortening
- 12 tablespoons sour cream
For the filling:
- 2 lbs. ground beef
- 1/2 cup chopped onions
- 4 tablespoons chopped parsley
- 1/2 teaspoon dried dill weed
- 1/2 teaspoon ground all-spice
- 2 pinches ground nutmeg
- 3 peeled and grated potatoes
- 3 cups shredded cheddar cheese (or cheese slices)
Directions:
Crumble in the ground beef and add onion, parsley, allspice, dill, nutmeg and grated potatoes. Cook and stir until the meat is browned. Drain any excess grease. Turn off the heat and stir in the cheese until melted. Or keep the slices of cheese out and used to set on top of the pies. Set aside to cool.
Preheat the oven to 400 degrees F.
In a large bowl, mix together the flour and salt. Mix in the shortening with a fork or pastry cutter until only pea sized lumps remain. Stir in sour cream a little bit at a time until the dough holds together. Knead briefly on a lightly floured surface. Or on a silicone mat, which is my all time favorite way to use dough!
Roll out the dough to 1/8 inch thick. I love using my Pampered Chef Baker’s Roller for this. Using an upside down cereal bowl, cut circles out of the dough.
Place 2 heaping tablespoons of filling onto each one. If you didn’t add cheese to the meat, add the slices here.
Fold over into half circles, and seal by moistening the edges with warm water and pressing together. You can use a fork to make a decorative edge. Place on a baking sheet.
Bake for 20 minutes in the preheated oven, until golden brown.

The filling is delicious! I’m having trouble with the dough. It’s not sticking together so I thought maybe the shortening and sour cream softened up too much from my hands so I’m letting it cool in the fridge for a bit. Hoping it works!
