All you need is about 20 minutes in the morning to start this hearty chili. It will make your house smell so good for when everyone gets home in the afternoon. You might not be able to wait until your normal dinner time to dish it up and gobble it down. This is so yummy with my homemade Sweet Honey Cornbread Muffins.
Where I live, in the Wasatch Mountains, it is so beautiful in the Autumn. I love everything about Autumn. It finally starts cooling off (I hate being hot), and out comes all the yummy comfort food that everyone loves. Chili is the ultimate comfort food and when you get a really good homemade recipe, like this one, there is nothing that can beat it on a cold, crisp Autumn day. Especially after a football game.
No, I’m not a football fan. I don’t hate it but I don’t like it either. I really should learn more about how to play the game, then I might like it better. None of my kids have voiced an interest, so we just don’t know a lot about it. We lean more towards soccer and softball. BUT, we do attend football games, because my daughter is a cheerleader.
About three years ago we moved back to the town I lived in when I attended High School, so my kids now attend my school. We are the Cavemen. Yes, the Cavemen. We are loud and proud. So since we’ve moved back and attended some of my old school’s football games, I’m transported back in time, standing with my classmates screaming my guts out.
After a chili night out you need a chili night in. Ha! I’m so clever. This recipe will hit the spot. I hope you enjoy it as much as my family does. Oh, by the way, it just gets better and better as leftovers, so make sure to make a lot.
Annette’s Easy Homemade Crock Pot Chili
- 2 lbs. ground hamburger
- 1 small yellow onion, diced
- 1 green bell pepper, diced
- 2- 28 oz. cans petite diced tomatoes
- 2- 15 oz. cans light red kidney beans, drained and rinsed
- 1- 4 oz. can diced green chilis
- 1 tsp. garlic powder
- 1 tsp. onion salt
- 1 Tbs. cumin powder
- 3 Tbs. chili powder
- 2 cups chicken broth
- 5 slices thick cut bacon, cooked and chopped
- Brown and crumble the hamburger and the diced onion on medium high heat until browned all the way through. Add the hamburger and onion to the crock pot.
- Cook the bacon in the same pan until crisp, then chop it and add it to the crock pot.
- Open the cans of beans and drain and rinse them in a colander. Add the beans to the crock pot.
- Add the diced green pepper, cans of tomatoes, green chilis, garlic powder, onion salt, cumin powder, chili powder, and chicken broth and stir until well combined.
- By this time, everything is in the pot. Cook it for 4 hours on high or 6 hours on low.
- Serve hot with shredded cheese, sour cream and cornbread muffins.
