I don’t know about you, but I have some kids that absolutely love vegetables and some that don’t. I have a son that will steal the tomatoes from the cutting board as I work and I have a daughter that absolutely hates them. So I have to get creative when making food for my kids to make sure they are getting enough veggies into their diets. The Garden Delight Ronzoni Tricolor Pasta is the perfect way to sneak those veggies onto their plates.
My family loves Caprese, even my daughter who hates tomatoes will eat Caprese. So I thought I would make a Caprese Pasta Salad for dinner the other night. I ran over to Wal-Mart and grabbed a few ingredients.
Garden Delight Ronzoni Tricolor Pasta, tomatoes, basil, mozzarella cheese, and Kraft Balsamic Vinaigrette. Simple, healthy and light ingredients are what makes this pasta salad so good.
I love the fact that my kids will be getting one serving of vegetables with every 4 ounces of the pasta that they eat. I like being sneaky! You can get the Garden Delight Ronzoni at most Wal-Marts, but here is a link to the product locator website so you can find some at a store near you.

Light and Healthy Caprese Pasta Salad
- 1 – 12 oz box Ronzoni Garden Delight Tricolor Rotini
- 4 roma tomatoes
- about 10 basil leaves
- 8 oz Kraft Balsamic Vinaigrette
- 1/2 pound mozzarella cheese
Cook pasta according to package directions. While the pasta is boiling, dice the tomatoes (removing the seeds first), mozzarella cheese and basil.
Drain the pasta then toss with cold water to keep it from sticking together and to help cool it off.
Add the pasta to a large serving bowl.
Add the tomatoes, cheese, and basil to the pasta and stir.
Pour 1/2 bottle of the Balsamic Vinaigrette and stir to coat pasta.
Serve chilled. Makes about 8 cups.

This is wonderful and looks delicious too! It is to hard to get kids to eat their veggies so any way to sneak them in is great. I love the pasta with it too. Looks like this dinner idea would be a big hit at my house.
