This recipe is one of my kids favorite comfort foods. I learned this recipe from my sister who was a very busy mom with small kids.
It’s one of those “What the crap are we going to eat for dinner tonight?” recipes. It’s fast, easy and the kids love it. And although it’s not the healthiest dinner, that’s OK with me. Sometimes you just gotta do what you gotta do to get the kids fed. I actually like this recipe a lot even though I don’t really like hot dogs. I actually crave it sometimes.
Hot Dog Boats
- 8 hot dogs (just use your favorite brand)
- 4 cups instant mashed potatoes (COOKED according to package directions)
- 2 cups (or more) shredded cheese (I use a combination of cheddar and jack cheese)
Line a cookie sheet with tin foil. Cut the hot dogs the long way making sure to NOT cut all the way through. Open the hot dog up like a butterfly cut.
Spoon about 1/2 cup of mashed potatoes onto the hot dogs, then sprinkle with shredded cheese.
Bake in the oven at 375 for about 5-10 minutes or until the hotdogs are warmed all the way through and the cheese is melted.
Serve warm. Enjoy!
