French Fries are my favorite guilty food. I guess I’m a steak and potatoes kind of girl. I can’t resist eating my kids french fries after I have ordered myself a salad at Wendy’s. They are just so good to eat but so bad for me! That’s why I absolutely love making my own baked french fries at home. These herb french fries hit the spot and are actually healthy because they are baked with olive oil instead of fried in a deep fryer.
I usually have to make enough for 7 to eat, so you can cut these measurements in half if you need to and adjust the seasonings as desired.
Homemade Herb Baked French Fries:
- 6 medium russet potatoes (you could use any kind of potato)
- 4 tablespoons Extra Virgin Olive Oil divided
- 2 tablespoons herb seasoning (I like Mrs Dash Seasoning Blend Garlic & Herb)
- Salt and Pepper to taste ( I didn’t even use any on mine )
- Double Zipper Gallon Bags
Preheat oven to 425 degrees. Wash and scrub your potatoes then cut them into wedges the long way. I cut mine smaller than wedges so they are more like fries if I’m using large potatoes. Place the potatoes in a gallon size zip top bag. Pour about 2 tablespoons of olive oil over the potatoes then sprinkle the desired amount of seasoning over the potatoes (about 1-2 tablespoons). Zip the bag and shake the potatoes until well coated. This is my kids favorite part!
As you can see in the image below, I cut my potato into strips rather than wedges because I used huge potatoes.
Prepare a Baking Sheet by coating it with about 1-2 tablespoons olive oil or spray it with cooking spray. I don’t use foil because the fries seem to stick to it no matter what. You could use parchment paper though.
Arrange the fries in a single layer on the baking sheet. I did the best I could with this amount of fries!
Bake at 425 degrees for about 35 minutes or until golden brown. Turning halfway through cooking. Serve warm with ketchup or fry sauce. These are amazing without dip also!

These look great! I like how you got your kids involved too. My kiddos would love to toss the bag. Thanks for the tip about parchment paper too. My baking sheets are so old and not great looking that I hate to put my food directly on them. I’ve been using aluminum foil, but most of the time food sticks to it and I hadn’t thought of using parchment paper to remedy that problem.

Thanks Aliza. I love to get my kids in the kitchen. My nine year old son loves to make cookies and brownies and he can to it all on his own. I feel like he could survive along if he needed to. On cookies and brownies. Ha Ha!
