My husband is not a sweets lover but he does love cake. When he was young, his father would make chocolate cake for dinner and they would serve it in a bowl with milk. It was never frosted, they have never been fan’s of frosting, even though their mom made the best frosting ever. He just loves the rich, dense, moist chocolate cake that his dad made. So he was on a quest to re-create that cake with a cake mix to make life easier. Here is my husbands Red Velvet Cake Mix Makeover.
Cake Mix Makeover
1 box cake mix any flavor
3 eggs
3/4 cup sour cream
1/4 cup vegetable oil
1 snack pack applesauce (or 1 cup)
1/2 cup water
Blend all ingredients well until smooth with beaters or a whisk attachment on your stand mixer. Prepare a 9″ spring form pan by spraying the sides with non stick spray and using parchment paper cut in a 9″ circle for the bottom of the pan. Bake at 350 degrees for 45 minutes or until toothpick inserted into center of cake comes out clean.
Let cool completely in pan, then remove the sides of the spring form pan. You may want to loosen the cake from the sides by running a butter knife carefully between the cake and the pan.
Cut the top off the cake to make a flat surface.
Flip the cake upside down on a serving plate and remove the parchment paper.
Frost the cake with my Homemade Buttercream Frosting and serve.
