These recipe for these cookies was quite by accident. I was starting to make chocolate chip cookies and realized I didn’t have chocolate chips in the pantry. But I did have cinnamon chips, so I improvised and these perfect Cinnamon Oatmeal Cookies were born.
Cinnamon Oatmeal Cookies
- 1 cup softened butter
- 1/2 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup steel cut oats
- 2 1/4 to 2 1/2 cups flour
- 2 cups cinnamon chips
Preheat oven to 375 degrees. With an electric mixer or stand mixer, beat butter and sugars together until light colored and creamy. Add the vanilla and mix well. Now at each egg one at a time mixing well in between each egg. In a separate bowl, mix the flour, salt, soda and cinnamon with a fork until well blended. Slowly add to the wet mixture, blending well between each addition. Mix in the oatmeal. With a wooden spoon, stir in the cinnamon chips. Drop by rounded tablespoons onto a baking sheet. No need to prepare the pan, but I like to bake my cookies on a parchment paper lined sheet. Bake at 375 for 8-10 minutes or until browning starts on the edges. Do not over bake. Let rest on the baking pan for 3 minutes.
Remove to a cooling rack and let cool completely, or enjoy while they are warm with a glass of milk.
