I know there are a million and one recipes just like this floating around in “Web Land” but let’s get back to the root of this blog, which is to be a source for my sons and daughters to have when they are parents themselves.
So I’m going to be posting all the “normal” stuff we make so my children can have them, specifically from their mom. That way, when I’m old and gray, I won’t have to dig through papers and papers of printed recipes to find that Perfect Chocolate Oatmeal No Bake Cookies recipe for them. They can just click and search my site.
If you haven’t tried these yet, you really need to. These are my favorite cookies of all time because of the Peanut Butter, Chocolate and Oats mixture. And because I don’t have to bake for an hour to get the whole batch done.
No Bake Chocolate Oatmeal Peanut Butter Cookies
- 2 cups sugar
- 4 Tablespoons cocoa
- 1 stick butter
- 1/2 cup milk
- 1 cup peanut butter
- 1 Tablespoon vanilla
- 3 cups oats (not instant oats)
In a medium saucepan, boil the first 4 ingredients for 1 minute. Remove from heat and add peanut butter, vanilla and oats. Stir well.
Lay out a sheet of parchment paper or wax paper on the countertop. Working with two spoons, scoop about a tablespoon of batter into the paper and form into a circle. Continue with the rest of the batter until done. Let cool at room temperature for at least 30 minutes before devouring! You can store these in an airtight container at room temperature for about two weeks.
