Curry is a comfort food for me. My husband and I like this little Thai Restaurant in our town and I always order the vegetarian version of their Massaman Curry. I really like to have my kids try new foods from different countries, and curry is the perfect dish to introduce them to Thai food. But actually, did you know that curry is traditionally a British food? Google it.
If you read my blog regularly, you know that my crock pot is well used. This dish is so easy to make because it’s made in the crock pot. Just stick it in at the beginning of the day and go about your cleaning and working. It will make your house smell amazing and the kids will want to gobble it up right when they walk through the door from school. The spices I use for this dish are not homemade. I love to use the Golden Curry package for this dinner. It just makes a busy mom’s life so much easier!
Here’s what you need:
Easy Crock Pot Golden Curry
- 5 potatoes peeled and cut into bite sized pieces
- 1 pound baby carrots cut in thirds
- 1 yellow onion cut into larger than diced pieces
- 1 pound chicken cut into bite sized pieces
- 7 oz. S&B Golden Curry (2 packages)
- 3 cups hot cooked white or brown rice *
- Optional- One can coconut milk (if you like it a little more runny and smooth coconut flavor)
Add the first 4 ingredients to the crock pot, season with salt and add enough WATER to cover about an inch. Cook on low for about 6 hours.
30 minutes before serving, add the Golden Curry packets and stir. Let cook for 30 minutes, stirring about every 10 minutes.
Serve over hot rice.
* I start the rice in the rice cooker right before I add the Curry packets to the crock pot and if you are adding coconut milk, add it now also. That way when the rice is done, so is the curry.

Curry is a weekly meal for my family. I’ve always considered trying it in my crock pot. Why wouldn’t you add the roux right at the beginning? One would think the spices would really permeate all of the meat and vegetables this way.

I don’t add the roux until the very end because cooking for that long in the crock pot would make it super thick. Cooking it this way still really let’s the curry permeate all the meat and veggies too!

Do you pre-cook your potatoes & chicken prior to placing in the crockpot or put them in raw?

No I don’t precook the chicken or the potatoes, they go in raw.

I know this is an older post, but I noticed a couple mistakes, so I thought I would let you know. 1. At the top, in the ‘what you need’ section, it says 7 oz. S&B Golden Curry, but the bottom says 9 oz. 2. Both directions say to start by adding the first 5 ingredients, but also to only add the curry packets 30 mins before serving – the problem is that the curry packets are one of the first 5 ingredients; I believe you meant first 4 ingredients as I don’t think you meant to say to add them twice.
Either way, I’m off to try and make this, thanks!
