So this Taco Soup Recipe is one that I have made for years. I think I got the recipe from my Sister in Law. It is definitely my favorite recipe. I’ve had others and they just don’t taste as good as this one. I’d call it a “dump soup” because you just dump everything in the pot and cook it. So easy!

Easiest Taco Soup Ever
- 1 pound ground beef
- 1/4 yellow onion, diced
- 2 cupsĀ frozen corn
- 1- 15 oz. can black beans (drained and rinsed)
- 4- 14.5 cans petite diced tomatoes
- 1 envelope 1.25 oz. McCormick Taco Seasoning or 3-4 teaspoons of your favorite taco seasoning (I do this to taste. Add more if you like)
- 4 cups water
- 4 chicken bullion cubes (or instead of the water and bullion you can use 4 cups chicken broth)
- Shredded cheese, sour cream, cilantro and tortilla chips for toppings
DRAIN and RINSE the black beans. Add 2 tablespoons olive oil to a hot stock pot. Add the onions and cook until translucent. Add the ground beef and brown and crumble it. Salt and pepper to taste.
Add the frozen corn then DUMP all other ingredients into the soup.
Let cook until heated through. Serve with Shredded cheese and sour cream on top and tortilla chips on the side. Enjoy!
