I really really love Caprese. The flavors of fresh tomatoes, fresh basil and mozzarella cheese just make me happy. Maybe it’s because I’m Italian and my ancestors are rubbing off on my taste buds. I don’t know anyone who doesn’t love Caprese. Even my kids love it.
We were at a Ward Party and my friend brought a Caprese Salad. It inspired me to make my own at home for dinner. Especially since my daughters garden produced these awesome tomatoes, and a huge basil plant.
Here is what you need:
6 oz egg noodles cooked and cooled by rinsing with cold water. You can use any other kind of pasta you have in your cupboard. We did a mix with shells too.
1/2 lb mozzarella cheese cubed
10-15 basil leaves sliced thinly
3-4 tomatoes diced
1 container yellow baby tomatoes sliced in half
Balsamic Vinaigrette to taste (about 1/2 cup)
Mix all ingredients together and enjoy! So easy, fresh and simple.
