These Parsley Butter Potatoes are our go to side dish for a lot of different meals. They are so flavorful and the perfect substitution for mashed potatoes.
Parsley Butter Potatoes:
- 4 to 6 medium red or yellow potatoes
- 1 stick salted butter
- 1/2 cup chopped fresh parsley
- Salt and pepper to taste
Do not peel the potatoes. Cut the potatoes into bite sized pieces. Add to water about 2 inches above the potatoes. Over high heat, bring the water to a boil. Turn to medium high and boil until the potatoes are fork tender. Do not over cook or the potatoes will be too mushy.
Drain the potatoes and add the cut up stick of butter, parsley and salt and pepper. Stir together until just blended. Do not over stir or it will turn into mashed potatoes. Taste and add more salt and pepper if needed.
Once you try these, you’ll add them to your regular dinner rotation.
