I love summer because it seems like every night we are barbecuing something. Meat’s, veggies and even fruit. This Chili Lime BBQ Chicken is one of my favorites with my homemade spice marinade. You’ll have to try it this summer at your next BBQ.
The marinade is so simple and really doesn’t have to be on the chicken very long. This time I only had it on there for about 15 minutes before I started cooking it. I’m sure it would be so much better after about an hour or longer though.
Chili Lime Chicken:
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon ground red pepper (cyan)
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 5 chicken breasts
With a meat mallet, beat the chicken until a universal thickness. This is very important when barbecuing so that the chicken doesn’t burn on one side and stay raw on the other side. Add the chicken to a gallon size zip lock bag or a square baking dish.
Mix together the first 6 ingredients in a small bowl.
Pour over chicken and work the chicken around so the marinade has covered all the chicken breasts.
Let sit for about an hour or more. BBQ the chicken as desired, about 7 minutes each side. Be sure to cook the chicken to 165 degrees for safety.
Serve with your favorite side dishes. We served it with Parmesan Asparagus and Parsley Butter Potatoes (recipe’s coming soon).
