My husband really liked to camp when he was younger. He is an Eagle Scout and loves all things scouting. His favorite breakfast for camping was always “Breakfast Hash” made in the dutch oven over hot coals. For Fathers Day this year, I thought it would be fun to make it for him for his “breakfast in bed”. It’s so easy and hard to mess up. With Bacon, Potatoes, Onions, Peppers, Cheese and Eggs, who wouldn’t like it? Right?
O’Brian Breakfast Hash Recipe: serves about 8
- One pound bacon
- 2 packages (24 oz. each) O’Brian Hash Brown Potatoes with onions and peppers
- 6 eggs
- 2 cups shredded cheese, your choice, I used Mexican Blend
Using a very large frying pan over medium/high heat, saute bacon until crisp.
Drain about half the grease then add the potatoes.
Cook according to package directions (about 15 minutes turning once through). Crack the eggs into a bowl and whisk with a fork.
Chop the bacon and add it to the potatoes. Mix well.
Pour eggs over the hash browns and mix and cook until no longer shiny and the eggs are cooked through.
Sprinkle with 1 cup cheese and stir.
Remove from heat and add the remaining cup of cheese to the top. Let melt then serve. (I always add more cheese though 🙂 Enjoy!
Easy huh? You’re family will love this. You can also substitute the bacon for breakfast sausage and the Potatoes O’Brian with some with no onions or peppers. It tastes just as good!
