Brownies are one of my families favorite treats. I love using the Betty Crocker Fudge Brownie Mix, but sometimes I get a little bored. We have been experimenting with different mix ins and this one is a keeper. These Sour Cream Brownies with Chocolate Velvet Frosting are awesome! Not to mention easy because they are from a mix.
Sour Cream Brownies
2 pkg (close to 20 oz each) brownie mix. We love Betty Crocker Fudge Brownies
2/3 cup melted butter
1 cup regular sour cream
4 large eggs
Preheat oven to 350 degrees. Spray bottom only of a 9×13 pan or line with foil.
In your stand mixer or a medium mixing bowl, beat the brownie mix, butter, sour cream and eggs until well combined.
Pour into your prepared pan and smooth out.
Bake 40-45 minutes or until a toothpick poked in the center comes out clean. Do not over bake.
Chocolate Velvet Frosting
2 tablespoons butter
1/2 cup semisweet chocolate chips
1/4 cup sour cream
1 1/4 cup powdered sugar
In a microwave safe dish, microwave the chocolate chips and butter until smooth. Start with 30 seconds, stir, then if not smooth microwave for additional 10 second intervals until melted and smooth. Do not over microwave!!
Cool for about 5 minutes then whisk in sour cream.
Gradually add in powdered sugar until thick, shiny and smooth. Makes about 1.5 cups frosting.
Frost brownies once cooled and serve. Here’s my tip for cutting the brownies. Use a sharp knife and clean off the knife with a paper towel after each pass.
