Blueberries are my husbands favorite berry so you might be seeing lots of different blueberry recipes from me. Sorry about that, but I post what I do in real life, so you’ll have to learn to live with it! Ha Ha! Anyway, these Blueberry Lemon Cobbler Bars are so delicious and even better when served a la mode, with vanilla ice cream.
This recipe is quick to put together and completely homemade. You’ll love how easy it is and I’m sure you’ll make it often during the peak blueberry season!
Here are your ingredients:
Milk, butter, sugar, bread flour, blueberries, & a lemon (not pictured).
- 1 stick Butter
- 1-1/4 cup Sugar
- 1 cup Bread Flour
- 1 cup Milk
- 2 cups Blueberries (frozen Or Fresh)
- 1 lemon for the zest and juice
Mix the flour and 1 cup sugar together in a bowl.
Whisk in the milk. Melt the butter in a microwave safe bowl and whisk into the mixture. Cut the lemon in half and squeeze the juice from both sides into the batter, mix well. Using a zester, zest half of the lemon into the batter.
Butter an 8″ square baking pan or a Deep Dish Baker from Pampered Chef (like mine).
Pour the mixture into the pan.
Sprinkle the blueberries all over the top.
Sprinkle the top with about 1/4 cup sugar.
Bake at 350 degrees for one hour or until golden brown. Sprinkle a little bit more sugar over the top of the cobbler about 10 minutes before it’s done cooking.
Serve warm with vanilla ice cream.
