These muffins were introduced to me by one of my friends at a recipe exchange party I put together. I thought the name 30 Day Bran Muffins was odd, then she explained to me that the recipe makes a ton and you can save the batter in the refrigerator for up to 30 days! That’s awesome for a busy mommy! You always want your muffins to be hot and fresh from the oven, so these are perfect!
30 Day Buttermilk Bran Muffins
2 cups 100% Bran cereal
2 cups boiling water
2 cups sugar
1 cup vegetable oil
4 eggs
5 teaspoons baking soda
2 teaspoons salt
1 quart buttermilk
4 cups Bran Flakes cereal
5 cups all purpose flour
Add the 100% bran to the boiling water, stir and let cool.
Meanwhile beat together the sugar, oil and eggs.
Add the buttermilk and beat until mixed thoroughly. Gradually add the flour, baking soda and salt. Mix in the bran water mixture.
Spray the muffin tin with non-stick spray or oil. Add about 3 tablespoons to the muffin tins.
Bake at 400 degrees for about 20 minutes or until center springs back when pressed with finger.
Store the leftover batter in an airtight container in the refrigerator for up to 30 days and use when you want to.

I’ve made these muffins for years with a slightly different recipe and I like this one better. I use brown sugar and olive or coconut oil. I also use part multigrain flour.
