Easy and Moist {Pumpkin Spice Bread}

 This recipe is perfect for fall!  It will make your house smell so… well, Homey and Autumney!  It’s VERY moist and so easy to make.  This recipe is for a double loaf.  I am warning you, DO NOT half the recipe and make only one loaf, you will be sorry you did.  The first loaf is eaten within about 15 minutes after it’s taken out of the oven~  Just long enough for it to cool down enough to not burn your mouth!  We had fun with a powdered sugar glaze too.  Just put some powdered sugar in a baggie, add milk little by little until it’s a good consistency  then cut a tiny hole in the corner of the baggie and drizzle the whole loaf with it and let it drip down the sides.  It will harden so you can wrap it up for leftovers, if there are any.  Then after we sliced it, we added more glaze to each individual slice, as pictured above.  My kids had so much fun helping out with the glaze, and also they loved it when I squirted it in their mouths too!

Pumpkin Spice Cake:

  • 1 (15 oz) can pumpkin puree
  • 4 eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 cups white sugar
  • 3 1/2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
Directions:
1. Preheat oven to 350 degrees. Butter or grease two bread loaf pans.
2. In a large bowl (or in your mixers bowl) mix together the pumpkin puree, eggs, oil, water and sugar until well blended.

3. In a separate bowl, whisk together the dry ingredients and spices.  Stir the ingredients into the pumpkin mixture until just blended.

Tip:   To make life easier on myself, I always mix in some of the flour to the wet ingredients first.  Then I take the last scoop of flour and add the other spices, salt and powder to the measuring cup and mix them together and add that last.  I’m sure some of you just gasped, but who wants to wash another bowl if you don’t have to!?

4. Pour into the prepared pans.
5. Bake at 350 for about 50 min.  I had to lower the temperature after that to 325 and bake for about 15 more minutes to let the center set.  Loaves are done when toothpick inserted into center comes out clean.

Drizzle the top with a powdered sugar glaze (mentioned in the paragraph at the top of the post)…
