Here is a family favorite, and it is soooooo easy!
1 Pkg Lemon or Strawberry Cake mix
2 Eggs
1/3 c. Vegetable Oil
1 tbls. lemon juice
3/4 c. chopped nuts or shredded coconut
Confectioners Sugar
1. Preheat oven to 375
2. Combine cake mix, eggs, oil and lemon juice in large bowl. Beat at low speed with electric mixer until well blended. Add coconut and stir. Use your cookie scoop or roll into 1 inch balls and place on a greased cookie sheet 1 inch apart. Bake for 6-7 min or until lightly browned. Cool 1 min then remove to cooling rack. Dust with confectioners sugar.
Note: you can also frost the cookies with 1 c. confectioners sugar and 1 tbls lemon juice in place of dusting cookies with sugar.
