These Blueberry Cobbler Butter Bars are so good! They are a combination of a few different recipes I’ve found, so they are my own little creation. And if I do say so myself, they are kind of amazing!
Blueberries always remind me of spring and summer time. And since I have Spring Fever really badly, I though I’d make something yummy with them. My husband loves blueberries, cobbler and butter cookies, so combining them into one recipe makes him happy. They are really easy to make too, so get your kids in the kitchen with you and get cooking.
Blueberry Cobbler Butter Bars:
- 2 sticks butter not softened (I used salted)
- 1 cup granulated sugar
- 1 1/2 cup powdered sugar
- 2 tablespoons lemon juice
- 1/4 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 cup oatmeal (instant if you want it less chewy)
- 3 1/2 cups all purpose flour
- 1 lb. fresh blueberries
Be sure to leave 1/3 of the dough out for later.
Bake for 15 minutes. Then remove from oven.
Sprinkle the blueberries evenly over the top of the cookie.
Then crumble the remaining dough on top of the blueberries.
Return to the oven and bake for an additional 25-30 minutes or until the center is done and the edges are golden brown.
Let cool completely, then remove from pan by lifting up the tin foil. Using a large knife, cut into bars.

Yum. love this. What i think is great about it is you could most likly change the blueberrys for somthing different like raspberries, or maybe even candy like rolos. i would try so much with this,, thanks

This is a delightful recipe! I came into a bunch of fresh blueberries and couldn’t resist making this. I am so glad I found it via Pinterest!! Instead of white sugar, I used brown and ended up baking my bars for about 50 minutes. Thank you for sharing your heavenly recipe (my neighbors are happy too since I shared our batch)!!

My family has annual blueberry bake-offs, where we make our favorite pinerest recipe including blueberries. I used this one yesterday, and I won! This recipe is amazing. I replaced almond extract with a bit more vanilla, and doubled the recipe. This is a recipe I would try again.

I added the text all together for you at the bottom. The reason I usually don’t do that with my recipes is because I’ve have people share my whole recipes on facebook without linking back to my site. Can I cut this recipe in 1/2 and baked in a 8×8 or 9×9 in pan
Yes, Dana you can cut it in half. It should work just fine.
I was wondering if you could use frozen blueberries? Fresh are not always available.
You could, but I would thaw them and blot them with a paper towel because they will be too full of water if you use them right from the freezer.
Do these freeze well

I used frozen berries and it was fine. My crust was a little too crunchy the first day but softened the next day. Very good!
