Crock Pot Zuppa Toscana Soup ~ Copy Cat

Olive Garden is one of my favorite places to go for Soup, Salad and Breadsticks.  Well, their breadsticks are only good if you dip them in alfredo sauce.  Let’s just say, I gain about 5 pounds when I eat there.

Zuppa Toscana Soup is what I always get when I am there.  It’s by far my all time favorite soup.  Hands down.  I think this is my Italian side coming out in me.

This copy cat recipe that I came up with tastes just like the one from Olive Garden, and because it’s made in the Crock Pot, it’s a cinch!

Here is all you need:

6 Ingredients, easy huh?
  • 1 pound Italian Sausage
  • 1 pint Heavy Cream
  • 1 bunch Kale, cut into bite sized pieces
  • 1/2 onion chopped
  • 6-7 Red Potatoes diced into bite size pieces
  • 14 oz chicken broth
  • 2 cups water
  • Salt and Pepper to taste
  • Parmesan Cheese as a topping
1. Brown  and crumble sausage in a  frying pan.
2. Add to your crock pot cooked sausage, diced potatoes, chopped onion, cut up kale, chicken broth and water.  Add salt and pepper.
3. Cook on low for about 4-6 hours.  30 minutes before serving, add heavy whipping cream and stir well.  Continue cooking for 30 minutes or more after adding the heavy cream.
Top with Parmesan cheese if desired.  Enjoy!

    How do you print out just the recipe ? I ended up with 5 pages I can’t wait to make this soup. I love the Olive Garden Zuppa. Thank you for the recipe.

      Copy and paste the ingredient list and instructions into a word processor. Then print it. I’ve tried using plug in’s for recipes and they always mess up my site, so I don’t use them anymore. Sorry!

        All I do is highlight the section I want to print, and click on print. I accidentally discovered that… I used to do the copy and paste thing 🙂

    I made this tonight and tried 6 hours on low and my potatoes were still hard. Mine were sliced a lot thinner than yours are in the picture. Did you boil yours first?

      No I didn’t cook my potatoes beforehand. Every crockpot is different, yours must cook a lot cooler than mine. Sorry about that!
