Have I told you that I am trying to lose weight? Wellll it’s not going so well, cause I just love food just too much! If you can’t tell… it’s what most of my posts are about. What mom doesn’t need new recipes though? We need a whole cookbook of family friendly recipes, so I don’t feel bad when I leave all my other ideas for blog posts behind. We need to keep our families interested in coming to the dinner table. That’s where strong families are built. Period!
So back to summer time. Camping is fun, it’s not my favorite thing in the world, mainly because I have had small children for 14 years. It’s hard going camping with little ones. You need to have something to strap them to so they don’t fall in the fire! And I HATE it when my babies hands are filthy dirty. I know, I have control issues. But, I do LOVE stargazing at night, no electronics, family conversations and S’mores. Camping really is fun, as long as it involves those things.
My husband really loves brownies. He likes them cake like though, which I think is a waste of calories. I want my brownies gooey. We make them often because there aren’t many treats he likes. I was sick of just plain old brownies so I thought as a tribute to the beginning of summer, I would make S’mores brownies. This is the recipe I came up with, and this is the method that worked for me.

S’mores Brownie Recipe:
-1 box brownie mix plus the ingredients to make them “cake like” by adding an extra egg
-6 full graham crackers
-about 2 cups semi sweet chocolate chips
-about 2 cups mini marshmallows
1. Mix the brownie batter according to the box directions. Mix in a cup of chocolate chips. Spray your pan with non stick cooking spray. Add the brownie mix to the pan. Cook for 12 minutes at 350 degrees.
3. Remove brownies from oven when 12 minutes is up. Sprinkle with graham crackers…
4. Sprinkle the remaining chocolate chips, or more if desired :)…
5. Then sprinkle with the marshmallows …
6. Bake for about 15 more minutes. This is what they will look like…
Perfectly browned for my taste, but if you want them darker, you can turn your broiler on to low and put them under it for about 2 min. NOT TOO LONG!

The marshmallows get a little more crispy after putting them under the broiler so if you don’t want crispy outsides, don’t broil them.
