I am not the best gardener. If you read my blog regularly you know that already about me. I try really hard. But I just absolutely hate weeding. And I hate making my kids weed. So we can only grow really hearty plants. Like tomatoes, basil, parsley, and zucchini.
We have one zucchini plant that survived our puppy running through the garden and it has produced some lovely zucchini. I’m always so proud of what we pull out of the garden. I always feel so accomplished when I can eat something from my backyard.
I decided that since we had an abundance of zucchini, that I’d make zucchini bread. I don’t make it very often because I’m more of a banana bread type of girl. I told my kids that we were going to make it and my daughter who is almost 16 said, “Mom, you HAVE to make Sister Bell’s Zucchini Bread! It’s the BEST!” So I had to text my daughters church teacher and ask for the recipe. She was in Hawaii at the time, but she kindly had someone at her home take the picture of the recipe and text it to me. Ha Ha! So, today I’m sharing this amazing recipe with you. It really is super good. You sprinkle cinnamon sugar in the pan before you bake it, so it makes it sweet and crispy on the outside and nice and soft on the inside. You’ll not want to make any other recipe after trying this one.
Cinnamon Spice Zucchini Bread
- 3 eggs
- 1 c. oil
- 2 tsp. vanilla
- 1 tsp. salt
- 1 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 2 c. sugar
- 2 c. peeled, grated zucchini
- 3 c. flour
- 1 tsp. baking soda
- dash of cloves
- cinnamon sugar mixture for sprinkling pans with
Beat eggs and oil until light and fluffy. Add zucchini and vanilla. Stir in dry ingredients. Spray 2 loaf pans or 5 mini loaf pans, with cooking spray.
Then sprinkle the pans with cinnamon sugar mixture and divide the batter evenly between loaf pans.
Bake large loaf pans at 325 degrees for 1 hour or the mini loaf pans for 45 min.
