This recipe is an easy one, and it’s so much fun for the kids. They love stacking on all the ingredients and making their own creations.
Mexican Haystacks
- 1 pound hamburger
- 1/2 yellow onion chopped
- 2 tablespoons homemade taco seasoning
- 2 chopped tomatoes
- 1 can black olives sliced
- 2 cups shredded Mexican blend cheese
- Variety of tortilla chips: Nacho Cheese Doritos, Cool Ranch Doritos, Fritos or just plain old tortilla chips.
- Sour Cream
- Guacamole
- Salsa
- Shredded lettuce
Brown and crumble the beef with the chopped onion until no longer pink. Drain the fat and add 1/4 cup water to the beef and sprinkle the taco seasoning all over the beef and stir. Simmer over low heat until thickened.
To serve, add chips to your plate.
Add beef.
Add cheese, lettuce, tomatoes, olives, sour cream and guacamole (optional). Serve with salsa if desired.
Let your kids create their own dish and let them feel like little chefs.
