If you love eating at Olive Garden, you probably know about the most delicious soup they serve there, Zuppa Toscana. It’s what I get every time I eat there. I love making the soup at home when we can’t go out to eat and I just recently tried it in my Instant Pot (affiliate link). It was so easy and turned out so delicious!
If you haven’t tried out an Instant Pot (affiliate) yet, what are you waiting for? They are so easy to use and not scary at all! At first I was worried that I would ruin everything that I made in it, but after using it for a long time now, it’s become my best friend.
Just watch how easy it is to make:
- 1 pound Italian Sausage
- 1 pint Heavy Cream
- 1 bunch Kale, cut into bite sized pieces
- 1/2 onion chopped
- 2 teaspoons chopped garlic or 2 garlic cloves, diced
- 6-7 Red Potatoes diced into bite size pieces
- 8 cups chicken broth
- Salt and Pepper to taste
- Parmesan Cheese as a topping
Ingredients
- 1 pound Italian Sausage
- 1 pint Heavy Cream
- 1 bunch Kale, cut into bite sized pieces
- 1/2 onion chopped
- 2 teaspoons chopped garlic or 2 garlic cloves, diced
- 6-7 Red Potatoes diced into bite size pieces
- 8 cups chicken broth
- Salt and Pepper to taste
- Parmesan Cheese as a topping
Instructions
- Turn the Instant Pot on saute. Add 1 tablespoon olive oil.
- When the pot is hot add the diced onions and saute until the onions are translucent.
- Add 1 pound Italian sausage and stir and crumble until browned.
- Add the diced potatoes and 8 cups of chicken broth.
- Place on lid and choose the Soup Setting for 15 minutes.
- Quick release the steam. Then remove lid.
- Add the kale and cream and stir.
- Serve with Parmesan cheese if desired.

I know this will sound dumb…but I went step by step on the recipe, and after turning the Instant Pot on, I realized that it didn’t make sense that I hadn’t added the garlic yet…and then I watched the video and it’s missing that part of the instructions on the written instructions. I hope my soup turns out okay! 🙁
