Quick and Easy Italian Minestrone Soup

This Minestrone Soup is one of our family’s favorite soups. I love to make it in the crockpot sometimes when I know it will be a busy day. But it comes together so quickly that it’s great for a last minute dinner.

Quick and Easy Minestrone Soup

Quick & Easy Minestrone Soup

  • 1 small zucchini (about a cup) sliced
  • 2 large carrots (about a cup) sliced
  • 1 cup frozen Italian green beans
  • 1/2 onion diced
  • 2 celery stocks (about 1/2 cup) sliced
  • 1- 28 oz. can diced tomatoes
  • 1 can 15 1/2 oz. light red kidney beans
  • 2 cans 14 1/2 oz each chicken broth
  • 2 cups water
  • 1 cup small or medium shell pasta
  • 2 teaspoons Italian Seasoning
  • Parmesan Cheese for sprinkling

Add all ingredients to a stock pot and cook, covered, on medium -high heat until veggies are tender and pasta is done to your likeness. Stirring often. About 20-25 minutes.**If you use a crock pot, do NOT add the pasta. Cook the pasta separately and add it to the soup when you are ready to serve. You don’t want over cooked pasta. Top with shredded Parmesan cheese and serve warm.

    Perfect timing for this recipe! I was just trying to figure out what in the world I should do with my last few zucchini. This sounds perfect.
