Red, White & Blue Cake Mix Sandwich Cookies~ 4th of July

I’m always looking for new cute ways to make Red, White and Blue treats for the 4th of July. Something unique that everyone doesn’t make. I thought these up after combining my favorite Cake Mix Cookie Recipe and my favorite butter cream frosting recipe.

Red White and Blue sandwich cookies

You’ll love how easy and quick these are. I know you don’t want to be spending any time in the kitchen when everyone else is out playing on the 4th of July.

Here is all you need for the cookies:

2 vanilla cake mixes
Red food coloring
Blue food coloring (mine was more of a turquoise color)
4 eggs
1 cup vegetable oil

Preheat oven to 350 degrees. In two separate bowls, mix one box of cake mix, 2 eggs and 1/2 cup vegetable oil until mixed well. Add food coloring until you reach the desired color. In one bowl goes the red and in one bowl goes the blue. Using a 2 tablespoon cookie scoop, scoop up the batter and place 2″ apart on a greased cookie sheet. Bake for 10-12 minutes but DO NOT OVERBAKE. If you overbake the color on the cookies will look bad. You don’t want any browning. You just need the cookies set in the middle. Oven temperatures vary, so you may need to reduce the oven temperature to 325 degrees if they are not cooking before browning. Remove from pan and cool completely.

While the cookies are baking, make THIS BUTTERCREAM FROSTING RECIPE. It’s perfection.

Perfect Buttercream Frosting Recipe

Now take a red cookie, frost the bottom of it then press the bottom of a blue cookie into the frosting and you’re done! So easy! I added some little Red and Blue Pin Wheels for some added cuteness. When you display the cookies have some red sides up and some blue sides up.
