Bake Sale Strawberry Lemonade Cupcakes! And Free Lemonade Stand Printables.

Ooohhh!  These are really good! And the word we all love… EASY!  Is your mouth watering yet!  I thought these would be perfect for your Summer Lemonade Stand or Bake Sale’s.  BTW, here is a FREE printable for decorating your Stands and making them cute and desirable (not like my kids stands where they pull anything out of the garage and use it to put the lemonade on!  HA!)  If you are reading this and you live in my neighborhood, don’t even think about using these for your own kids, I call it first!! 😉 (just kidding… kind of)

Recipe:

Lemonade Cupcakes
1 box white cake mix
3 eggs
1/3 c. oil
1/2 c. water
1/2 c. lemon juice
3 T. sour cream
Yellow Food Coloring (optional)
Follow instructions on box and bake into cupcakes 🙂 

Strawberry Buttercream Frosting
This recipe makes a LOT of frosting, you could cut it in half, but I like to make more for chocolate cupcakes, and homemade Oreos too 🙂
4 large strawberries at room temperature
2 sticks of butter, at room temperature
1 teaspoon pure vanilla extract
 about 2 pounds powdered sugar
2 tablespoons heavy cream

Chop strawberries finely and place on paper towel to soak up some of the moisture.  Add butter to bowl and beat with a mixer until fluffy, add vanilla and about 2 cups of the sugar. Blend well, incorporate cream. Add in small amounts of powdered sugar, blending well after each addition, to reach the desired consistency, beat until fluffy. Frosting should be smooth and soft, yet hold its shape.

How to Decorate:
I use a gallon sized zip lock bag with the end clipped off to decorate the cupcakes with.  Please don’t look closely at my 12 Year old son’s fingernails in this picture!

    Those look delicious! Only problem is that I'll probably end up eating most of them myself, I have no willpower with strawberries. But it's fruit, so it's a healthy sugar, right? 🙂

    Thanks for sharing! I am doing a baby shower on Saturday and have been searching for a good strawberry frosting that will hold it's shape. Hope they're wonderful because I'm gonna try them!
